Gently saute a small onion and a stick of celery in a tablespoon of canola oil. Add a couple of sliced mushrooms if you have them. Add spices. Add two tablespoons of butter, when it melts add two tablespoons of flour and stir well. Add two cups of chicken or vegetable broth. Grate and add two carrots, one chopped potato, a cup of frozen corn, and a cup of milk. When the potatoes are cooked, add some chopped white fish (no bones!), or a can of drained tuna. Simmer for another 10 minutes. Optionally add some chopped parsley, and/or a handful of grated cheddar cheese just before serving.
