Honey Walnut Bread

Makes two loaves of dense bread.

1 cup water

1 TBSP sugar

2 cups whole wheat flour

2 cups all purpose flour

1.5 tsp salt 

2 TBSP honey 

1.5 tsp active-dry yeast

1 cup chopped walnut 

Heat the water and sugar till warm (120F to 130F). Add the honey and stir. 

Mix the flours and salt in a large bowl.

Make a well in the middle of the flour, and add the liquid. Sprinkle with the yeast and let it foam,

(about 15 min).

Mix, knead, and let it rise about 1 1/2 hour.

Punch down, add the walnuts and knead them into the dough evenly if you can.

Divide into two, and let them rise again, for 1/2 hour.

Preheat oven to 425F. 

Slash the top of the doughs, bake for 15 min. Reduce temperature to 375, bake for another 30 min.
