No Cuss Pie Crust

Makes one double crust 9" pie

2.5 Cups (12.5 oz)

All-purpose unbleached flour

2 TBSP

Sugar

1 tsp

Salt

12 TBSP

Cold unsalted butter

2 TBSP

Canola oil

1/4 Cup

Cold vodka

1/4 Cup

Cold water

Mix the dry ingredients.

Cut the cold butter into the flour, make sure all the pieces of butter get coated with flour.

Sprinkle the oil and mix with a fork.

Sprinkle the vodka and water and mix with a fork. Then divide the crumbly mess into two roughly equal parts. Put one part on a piece of plastic wrap and bring it all together with your hands into a round flat disk about 4" wide. Fold the plastic wrap over it and refrigerate. Repeat with the other half. Leave in the fridge for at least 30 min.

Leaving it on the plastic wrap, roll one disk into a circle and line the pie pan. Put it back in the fridge while you roll out the top. Fill the pie, cover, and sprinkle with sugar, and/or brush with milk, or brush with an egg white.

Bake at 400F on preheated baking sheet, for 20-25min. Reduce to 375F and bake for another 30-45 min.
