(not as healthy as the Devil's food chocolate, but scrumptious!)
6oz unsalted butter
1 ⅓ cup sugar
1 cup sour cream or plain yogurt
Sift together the following:
1 1/2 cup flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
Take out the butterand leave it to get to room temperature.
Preheat the oven to 350F.
Butter a 9.5" x 5" loaf pan, and dust it with flour.
Beat together the butter with 1 1/3 cup sugar at medium speed. When it is light and fluffy, add 2 eggs one at a time and beat for 1 minute after adding each. Add 1 cup sour cream and beat on low speed to mix it in. Add the sifted ingredients and mix with a spoon until everything is well combined. Don't over-mix. Scrape the batter into the pan, and smooth the top with a knife. Put the pan on top of an insulated baking sheet (I used a heavy duty cookie sheet) and put it in the oven for 40 minutes - 60 minutes.
