Pizza Dough

Makes 2 rounds 12" each 

450g all-purpose flour

1 cup warm water

1 TBSP sugar

1/2 tsp salt

1 tsp active-dry yeast 

Mix everything together in the bowl of your KitchenAid. If it's too dry add more water - a tablespoon at a time. 

Knead it for 5 minutes. Put a little oil in the bottom of a big bowl, and roll the dough round in it so the surface is oily. Cover, and leave in a warm place to double in size, this usually takes about 2 hours.

Punch it down, divide into two and let the two pieces sit in a warm place, covered, for about twenty minutes.

Now they're ready to roll/shape into two 12" rounds, and add the toppings.

If using a stone, put it in the oven and preheat oven to 425F. If using a stone, let it stay at that temperature for another 5 - 10 minutes before putting anything in. 

The pizzas take about 11 minutes to cook, you can turn on the broiler for another minute or so for a crispier top.
