Buttermilk Pancakes

Makes 10-12 pancakes (about 8" each)

2 1/2 cup flour

4 TBSP sugar

1/2 tsp salt

4 tsp baking powder

1 tsp soda

3 cups buttermilk

2 eggs

1/4 cup canola oil 

Mix the wet ingredients. Mix the dry ingredients. Add the wet stuff to the dry stuff and stir with a fork. 

The batter doesn't get very smooth (don't worry about some lumps - don't over-mix). Let it sit for 5 - 10 minutes before pouring in approximately 3/4 cup measurements into hot non-stick pan.
