Pia’s Banana Cake

½ cup butter

½ cup white sugar

½ cup brown sugar

2 eggs

2 - 3 ripe bananas, mashed

½ tsp vanilla extract

¼ cup milk

¼ cup boiling water

1 ½ tsp baking soda

1 ½ tsp baking powder

2 cups all-purpose flour

½ tsp lemon juice

½ cup chopped walnuts

½ cup chocolate chips (optional)

Preheat oven to 350F.

Grease and flour a 9x5 loaf pan. Or two 4 ½ x 8 pans, the cakes will be somewhat flatter if you use two pans.

Cream the butter and sugars together till fluffy. Add the eggs one by one. Add the banana mash and lemon juice.

Mix the dry ingredients in a bowl. Add them to the egg mixture alternating with the milk and hot water in which the baking soda has been dissolved.

Fold in the walnuts and chocolate chips if using.

Pour into pan or pans and cook for 40 to 50 minutes. Two pans will bake faster than one.
