Apple Popover


2 large Granny Smith Apples (1 pound), peeled, cored, and cut into 1/4 inch slices (don’t use too many apples just cuz you really have some apples you need to get rid of, there will be an apple explosion in the top and it won’t look good)

2 tablespoons unsalted butter

2 tablespoons granulated white sugar

1/4 teaspoon ground cinnamon

Popover Batter:

3 large eggs

1/2 cup milk

2 tablespoons unsalted butter, melted

1 teaspoon pure vanilla extract

1/2 cup all-purpose flour

2 tablespoons granulated white sugar

Preheat oven to 425F.

Heat an ovenproof 10 or 12” skillet on medium-high heat. Melt the 2 TBSP butter, and add the 2 TBSP sugar, apples and cinnamon. Cook until apples are tender.

Use a blender (or hand blender) to mix all the popover ingredients. It is best to let the milk and eggs come to room temperature.

Pour the

 smooth batter over the apples in the skillet and put the whole thing into the oven for 18 to 20 minutes. Don’t open the oven door while it’s baking or it won’t puff up properly.
