Makes 3 dozen, you may want to halve this

8oz unsalted butter, at room temperature

8oz sugar

zest of one lemon

1tsp vanilla extract

4 eggs

5oz all-purpose flour

3oz almond meal*

2tsp baking powder

Preheat the oven to 350F.

Butter and flour your madeleine pan even if it is non-stick.

Mix the dry ingredients.

Beat the butter and sugar till fluffy. Add the lemon zest and vanilla extract.

Add two of the eggs and blend, add half of the flour mixture, the remaining eggs, and the rest of the flour.

Spoon the mixture into the pan filling the moulds by two-thirds, don’t overfill the moulds!

Bake for 8 to 10 minutes.

*Instead of almond meal and flour you could use just 8oz flour. If using the almond meal toast it in a 300F oven for 5-10 minutes to improve the flavor.
