Simple Barley Soup

for two

1 cup of cooked barley

6 cups homemade chicken stock

1/4 onion

1 portabello mushroom, or about 8 crimini or white mushrooms, sliced small

several sprigs of cilantro

olive oil

Fry the onion in about 1 TBSP of oil until translucent. Add the chopped mushroom(s) and keep on med-high till the mushrooms have given off their water and seem crispy. Add the broth and barley, bring to a boil and simmer for 15 minutes. Add the cilantro and simmer for another 5 minutes. Surprisingly tasty!
