Multigrain Sandwich Bread

(Makes two 9"x5" loaves)

6 1/4 oz (1 1/4 cups) 7-grain hot cereal mix (Red Mill brand)

20 oz (2 1/2 cups) boiling water

15 oz (3 cups) unbleached all-purpose flour

7 1/2 oz (1 1/2 cups) whole wheat flour

4 TBSP honey

4 TBSP butter, melted

2 1/2 teaspoons instant yeast

2 tsp salt

rolled oats for decoration

Place cereal in a large bowl, pour boiling water over it and stir occasionally for about an hour. The mixture will cool and thicken.

Mix the whole wheat and all-purpose flours together.

Add the honey, yeast, and butter to the cooled grain mixture, and stir to combine.

Add the flours to the mixture slowly and stir thoroughly. Cover and let sit for 20 minutes.

Add the salt, knead the mixture till it forms a smooth taut ball. Put in a large, greased bowl, and let it rise till doubled, 45 - 60 min.

Grease up two 9x5 pans. Divide the dough, roll them in the oats and put them in the pans. Let it rise for another 30 - 40 min. Bake in 375F oven for 40 minutes.
