Dimply Plum Cake

1 1/2 cup all-purpose flour

2 tsp baking powder

1/4 tsp salt

1/4 tsp cardamom

5 TBSP butter, unsalted, at room temp

3/4 cup brown sugar, packed

2 eggs

1/2 canola oil

Grated zest of one orange

1 1/2 tsp vanilla extract

8 purple italian prunes, halved and pitted

Preheat oven to 350F.

Butter and flour a pyrex 8"x8" dish.

Whisk together all the dry ingredients and orange zest.

Beat sugar and butter together till light and fluffy, add oil and vanilla extract.

Add the dry ingredients and mix gently till they are incorporated.

Scrape the batter into the pan and smooth the top. Add the prunes cut side up and settle them in.

Bake for 40 min. Transfer to rack and cool for 15 minutes.
