Makes one loaf
Zest of one lemon
1 cup sugar
½ cup plain yogurt
½ cup canola oil (or other flavorless oil)
1 tsp vanilla extract
1.5 cups all-purpose flour
2 tsp baking powder
Preheat oven to 350F.
Mix the sugar and lemon zest with a fork to distribute the zest more or less evenly.
Using a handheld mixer blend the sugar, zest, eggs, yogurt, oil, and vanilla extract.
Stir in the flour and baking soda together and add to the rest.
Pour into a buttered and floured 9”x5” loaf pan.
Bake for 50 minutes.
